Chai Mixology: Cocktails, Mocktails & Beyond

Looking to level up your drink game? We’ve rounded up a few of Team NEMI’s absolute favourite recipes, all crafted using our signature organic Chai Syrup. From refreshing iced chais and fizzy mocktails to cozy evening twists, there’s a creation for every mood. Hot Chai Latte

A warming, spiced classic; steamed milk poured over chai syrup for a cozy everyday indulgence.

  • 25 ml chai syrup

  • 200 ml milk (dairy or oat), steamed

  • Pinch of cinnamon or nutmeg, to garnish

Method: Combine the chai syrup and milk in a pitcher. Steam until frothy, then pour into a cup. Garnish with a dusting of cinnamon or nutmeg.

Dirty Chai

A hot chai latte with a shot of espresso stirred in; the coffee's bitterness cuts through the chai’s sweetness.

  • 25 ml chai syrup

  • 30 ml espresso (1 shot)

  • 180 ml milk, steamed

Method: Pull the espresso shot into a mug with the chai syrup and stir to combine. Top with steamed milk and then serve.


Iced Chai Latte

A refreshing hit of exotic flavours; chai syrup and cold milk over ice.

  • 25 ml chai syrup

  • 150 ml cold milk (dairy or oat)

  • Ice cubes

Method: Fill a glass with ice. Add the chai syrup, then pour over the cold milk. Stir well. 


Chai White Russian

A creamy, dessert-like riff on the classic cocktail, with chai syrup swapped in for sweetness.

  • 45 ml vodka

  • 25 ml coffee liqueur

  • 25 ml chai syrup

  • 30 ml cream (or milk)

  • Ice cubes

Method: Fill a glass tumbler with ice. Add vodka, coffee liqueur, and chai syrup. Stir. Float the cream on top and swirl gently before serving.

Chai Old Fashioned

A spirit-forward, stirred cocktail where chai syrup stands in for simple syrup, adding warming spices to the whiskey and bitters.

  • 60 ml bourbon or rye whiskey

  • 15 ml chai syrup

  • 2 dashes aromatic bitters

  • Ice cubes

  • Orange twist and cinnamon stick to garnish

Method: Combine whiskey, chai syrup, and bitters in a mixing glass with ice. Stir for about 20–30 seconds until well chilled. Strain into a glass tumbler over a large ice cube. Express an orange twist over the drink and serve with a cinnamon stick.

Chai Shrub Soda

A tangy, fizzy mocktail where a splash of vinegar shrub cuts through the chai syrup's sweetness for a grown-up soda.

  • 25 ml chai syrup

  • 15 ml apple cider vinegar shrub (or plain apple cider vinegar)

  • 120–150 ml soda water, chilled

  • Ice cubes

  • Cinnamon stick or apple slice, to garnish

Method: Fill a highball glass with ice. Add the chai syrup and shrub, then top slowly with soda water. Stir gently from the bottom up and garnish.

Chai Lemonade

A delightful sweet-spicy-tart mashup.

  • 25 ml chai syrup

  • 200 ml lemonade of choice

  • Lemon slice and cinnamon 

Method: Fill a highball glass with ice and add the chai syrup. Pour over the lemonade and stir to combine. Garnish with a slice of lemon and dust with cinnamon.


Chai Fizz 

This drink showcases our Chai Syrup, giving it the wow-factor, and is a great way to offer your guests something memorable. 

  • 50ml Hendricks Gin (or whatever you prefer) 

  • 25ml freshly squeezed lemon juice 

Combine all ingredients into a shaker filled with ice and shake until suitably chilled. Strain shaker ingredients into a glass, rim a lemon peel along the edge and top with your favourite fizz. Try garnishing with a lemon twist!


Chai Hot Chocolate

A rich, indulgent mashup of hot chocolate and chai, where the spice notes deepen the chocolate's flavour.

  • 25 ml chai syrup

  • 200 ml milk

  • 20 g dark chocolate powder

Method: Steam the milk until hot. Whisk in the chocolate powder until smooth. Stir in the chai syrup, briefly steam again and pour into a mug.

Golden Chai Latte

A soothing turmeric-spiced milk latte, with chai syrup layering warm sweetness over the earthy golden milk base.

  • 25 ml chai syrup

  • 200 ml milk (dairy or plant-based)

  • 2 g ground turmeric (about ½ tsp)

Method: Add the chai syrup, milk and turmeric to a pitcher and steam until hot. Pour into a mug and garnish with cinnamon or nutmeg powder.
