With our delightful recipe for Vegetarian and Gluten-Free Matcha Infused Waffles you are not just treating your palate but also starting your day with a guilt-free sweet with matcha that’s healthy, organic and ethically produced.

Ingredients:

- 2 cups gluten-free flour/ refined flour

- 2 tablespoons NEMI’s matcha powder

- 2 tablespoons coconut/white/brown sugar

- 1 tablespoon baking powder

- 1 ¾ cups milk (or a plant-based milk)

- ¼ cup coconut/vegetable oil, melted

- 1 teaspoon vanilla extract

Instructions:

1. Preheat Your Waffle Maker:

Start by preheating your waffle maker to ensure your matcha waffles cook perfectly.

2. Whisk the Dry Ingredients:

In a large bowl, whisk together the gluten-free flour, matcha powder, coconut sugar, and baking powder. This matcha blend adds a delightfully earthy flavour and a burst of antioxidants to your waffles.

3. Create the Wet Mixture:

In a separate bowl, combine the almond milk, melted coconut oil, and vanilla extract. Mix until well incorporated.

4. Combine and Mix:

Gently pour the wet mixture into the dry ingredients, stirring until just combined. Be careful not to overmix; a few lumps are perfectly fine.

5. Cook the Waffles:

Spoon the batter onto your preheated waffle maker and cook according to the manufacturer's instructions until golden brown and crisp.

6. Serve and Enjoy:

Plate your matcha-infused waffles with your favourite toppings – some fresh berries, a drizzle of maple syrup, or a dollop of butter or cream.
