Spicy Chai Blueberry Scones

Bake, glaze and enjoy with your favourite NEMI tea as part of your brunch or any other time you feel like it.

Ingredients

  • 2 ½ cups all-purpose flour (more for work surface)

  • ¼ cup + 1 tbls sugar

  • 1 tbls baking powder

  • ¾ tsp salt

  • ½ cup ice cold unsalted butter

  • ½ cup blueberries

  • ¾ cup buttermilk

  • 1 large egg yolk

  • 1 ½ tsp orange zest

For Chai Glaze

Method

  1. Preheat oven to 200C.

  2. In a large ball sift together flour, ¼ cup sugar, baking powder and salt.

  3. Grate butter into flour mixture and toss together with a fork. Add currants

  4. In a small ball, whisk together buttermilk, egg yolk and orange zest. Slowly pour buttermilk mixture into flour mixture, mixing just until the dough comes together.

  5. Transfer dough to a lightly floured surface. Roll out dough into a one-inch-thick square cut into two-inch pieces. Place pieces two inches apart on parchment-lined baking sheets.

  6. Bake for 15-18 minutes, until golden brown. Let scones cool.

  7. Mix powdered sugar and chai until smooth.

  8. Once scones have cooled, cover with Chai glaze.

  9. Serve and enjoy!
